Driven by a passion for Aspen’s vibrant culture and panoramic landscapes, Harley and Maryanne Sefton were prompted to take a leap of faith to open PARC Aspen. Now recognized as one of the best dining destinations in the area, guests are welcome to an experience that is deeply connected to a sense of place.
The only Peruvian Executive Chef in Aspen, Stefano Schiaffino, blends French technique with his heritage to offer a refined menu of dishes that feature global flavors prepared with ingredients that are locally sourced whenever possible. Signature dishes include 11-year Bourbon Smoked Elk Loin, Mushrooms and Polenta and Foie Gras Chaud Froid. “Menus are seasonal,” says Chef Stefano. “Each summer we take the opportunity to preserve produce to serve during the cooler months when it’s not available.”
One of the most distinguished wine programs in Aspen serves to complement the delicious menu. “We have been honored to receive Wine Spectator’s Best of Award of Excellence,” says Maryanne Sefton. “Our wine list features more than 1,300 curated labels from iconic estates and emerging producers around the world.” The thoughtfully chosen selections enhance the menu, flawlessly connecting the food, wine and experience.
In addition to reservation dining, Chef’s Table private dining can be arranged. Guests can select from a pre-set menu or request a custom menu for a truly bespoke experience. A room with a direct door to the kitchen allows for a customized experience with chef’s service and an explanation of the preparation of each dish. “It is a pleasure to help guests lean into many flavors in a truly personal way,” Chef Stefano explains.
The restaurant’s meticulously curated aesthetic is designed to welcome and make diners feel pampered. “We work with local Aspen Branch Design to create fresh floral arrangements for the interior,” says Sefton. “They also line boxes with aspen bark and custom silk arrangements for our outdoor patio.”
PARC Aspen also serves as a unique venue for special occasions and celebrations. “We love treating guests to anniversary dinners, rehearsal dinners, elopements and wedding receptions,” Sefton says. “We can also reserve a chef’s table experience for smaller, private or corporate celebrations.” To peruse the menu, or to book an evening of fine dining reflective of the Aspen surroundings, reservations can be made in advance at the PARC Aspen website.
