Ranch Beans Recipe

INGREDIENTS
1 cup dry kidney beans
3 minced garlic gloves
1 small white onion, diced
1 TBSP tomato paste
3 cups boiling water
1⁄2 tsp ground cumin
1⁄2 tsp Italian seasoning
1⁄2 tsp dried mint
1⁄2 tsp salt (more upon taste)
1⁄4 tsp fresh ground black pepper

METHOD
Pick over the beans and remove any pebbles or other debris. Soak them in a pot, with water to cover, for at least 8 hours (overnight works fine). Add 1⁄4 tsp of baking soda to the soaking beans to help make them easier to digest. Drain and rinse the beans. In a large pot, saute the garlic, onions until translucent. Add the tomato paste and stir together. Add a cup of boiling water. Stir in the prepared beans, spices, and remaining water. Simmer uncovered for 45 minutes.
