12 servings canola oil for frying6 semi-ripe plantains, peeled* and thinly sliced**saltPour oil into a skillet to a depth of about 3 inches and heat to about 375 degrees. Add plantain slices in batches and fry until brown on both sides. Remove from skillet using slotted spoon and drain on paper towels. Sprinkle with salt and serve.*If peeling the plantains is difficult, cut tips from each end using sharp knife and discard. Halve the fruit crosswise. Cut 4 evenly spaced slits lengthwise through peel to fruit, starting at corners of one end; remove peel in crosswise direction.**A food processor fitted with a slicing disc works well.
